Shaw was forced off in the 67th minute of the win at Goodison Park and, according to The Athletic, is set to be out until December.
The injury was a reason for United manager Ole Gunnar Solskjaer to hit out at the fixture schedule in his post-match comments.

‘These boys deserve better,’ Solskjaer raged on BT Sport. ‘Luke Shaw has got injured because of it. It’s a hamstring which might be a long one and Marcus Rashford might be struggling.
‘The authorities set us up to fail. Who is responsible? We’ve had enough of that. Players this season, in these times, a pandemic, mentally and physically it’s draining. Let us play on a Sunday, there’s an international break after this, it’s a joke.’
United had, the previous Wednesday, been playing against Istanbul Basaksehir and didn’t get back to England until Thursday morning. Their match with Everton was Saturday’s early kick-off.
Shaw has been one of United’s most consistent performers in recent weeks and going into the Everton encounter, had played every minute of United’s previous seven matches.
His absence will hand an opportunity to new arrival Alex Telles, who joined United on a four-year contract from Porto in the previous transfer window.

The 27-year-old Telles has only made one appearance for United so far, playing 67 minutes of the 2-1 victory over Paris Saint-Germain in the Champions League last month.
His settling in process has been hampered somewhat by contracting coronavirus and he only returned to training on Friday.
United are 14th in the Premier League with 10 points from seven matches. They are next in action on November 21, at home to West Brom.
